Instructions

In a large bowl, combine the lukewarm water, honey, and yeast. Stir well and let sit for 5 minutes.

Add the olive oil and mix well. Add the flour and salt, then knead for 10 to 12 minutes, until smooth.

Cover the bowl and let the dough rise for about 1 hour, or until doubled in size.

While the dough rises, add the Gouda and cream cheese to a food processor and blend until well combined and smooth.

Deflate the dough and divide it into 12 pieces, about 2 oz (60 g) each. Roll each piece into a ball.

Working with one ball at a time, flatten it out into a small circle. Place about 1 oz (29 g) of the cheese mixture in the center.

Gather the edges of the dough up and around the filling to seal it completely.

Pinch the seams firmly so the cheese can't leak out during baking. Flip the dough and place it seam-side down on a parchment-lined baking sheet.

Brush the tops with herb butter, sprinkle with shredded cheese, and top with pepperoni slices. Let rise for another 30 minutes.

Bake in a preheated 400°F (200°C) oven for 12 to 18 minutes, until golden brown.
