Looking for a fresh and flavourful salad? This pearl couscous salad with feta is exactly what you need. The round, tender pearl couscous pairs with salty feta, vegetables and a light dressing of olive oil, vinegar and tomato sauce. Perfect as a lunch or as a side dish at your next barbecue.

Bring a pot of water to a boil. Add the pearl couscous and cook for 11–13 minutes, or until tender. Drain well and let it cool completely.

Prepare all the ingredients.

Transfer the cooled pearl couscous to a large bowl. Add the tomato sauce, olive oil, vinegar, Italian seasoning, and salt. Mix well.

Add the pickles, red bell pepper, red onion, chives, cucumber, Kalamata olives, feta cheese, avocado, and cherry tomatoes.

Mix together until well combined.
