Place the softened cream butter along with the lemon zest and sugar in a deep bowl. Mix until combined. Add the flour and mix well. Knead until nicely combined.

Take some of the cookie dough (15 g) and form it into a ball. Repeat this procedure.

Grease the cookie tin and press the cookie dough into it well.

Place the cookies in a preheated oven at 200 ℃. Bake for 10-15 minutes or until the cookies are nicely golden brown. Every oven works differently, so keep an eye on the baking time for yourself.

Carefully remove the cookies from the oven and immediately press in with a cap to create depth (the cookies are very hot when you do this). Let the cookies cool.

Heat the sugar along with the water and honey in a skillet over medium-high heat. Mix well. Boil until the sugar is dissolved. Add the nut mixture and cook with it until the sugar mixture caramelizes.
