These chicken tikka masala stuffed rolls are soft, fluffy homemade bread wrapped around a creamy, spiced chicken filling. They’re brushed with garlic herb butter before baking, so they taste like the best stuffed garlic bread you’ve ever had, with a curry twist. Serve them for game day, pack them for lunch, or turn them into a fun weeknight dinner.
What Are Chicken Tikka Masala Stuffed Rolls?
Think of them as a mash-up of two favorites: stuffed garlic bread and chicken tikka masala. The filling is made with chicken thighs, a flavorful blend of spices, tomato paste and crème fraîche, so it’s rich and creamy without being runny. A little honey balances the heat of the cayenne, and shredded cheese melts into the sauce to hold everything together.
How to Make Chicken Stuffed Rolls from Scratch
As with any dough, the key ingredient is patience. It might sound like a cliché, but that doesn’t make it any less true.
Start with the dough. Yogurt makes it extra soft and tender, and the garlic herb butter flavors it from the inside out. While the dough rises, make the filling. Let it cool completely before you fill the rolls, because warm filling makes the dough sticky and hard to seal.
Once the rolls are filled, brush them with melted garlic butter and let them rise a second time. Don’t skip this step: it gives the rolls the fluffiness that sets them apart.

Tips
Cool the filling completely. You can make it a day ahead and keep it in the fridge.
Don’t overfill.
Seal well. Fold the sides in first, then roll it up like a burrito and pinch the seam closed.
Bake seam-side down, so the rolls keep their shape and don’t burst open.
Instructions

In a large bowl, stir together the lukewarm water, yeast and honey. Let it sit for 5 minutes.

Add the yogurt, herb butter, flour and salt. Knead for 10–12 minutes, until smooth and elastic.

Cover the bowl and let the dough rise in a warm spot for about 1 hour, or until doubled in size.

Heat the olive oil in a large skillet over medium heat. Add the onion and cilantro and cook for 3–4 minutes, until softened.

Add the chicken, curry powder, turmeric, cumin, cayenne and paprika. Crumble the bouillon over the top. Cook for 5–6 minutes, stirring occasionally.

Stir in the tomato paste, water and crème fraîche. Simmer for 4–5 minutes, until thickened.

Stir in the honey and shredded cheese until the cheese has melted.

Remove from the heat and let the chicken cool completely before filling the rolls.

Deflate the dough and divide it into 8 equal pieces, about 89 g (3 oz) each. Shape them into balls.

Roll out each ball into a circle about 6 inches wide.

Place a cheese slice in the center and top with about ⅛ of the filling (roughly ⅓ cup). Add sauce if you like.

Fold the sides of the dough over the filling, then roll it up like a burrito so the filling is fully sealed. Gently pinch the seam closed.

Place the rolls seam-side down on a baking sheet lined with parchment paper. Brush with melted garlic herb butter. Let them rise for 30 minutes, until puffy.

Bake in a preheated oven at 400°F (200°C) for 15–18 minutes, until golden brown and cooked through
