Chicken souvlaki is one of Greece’s most beloved street foods and once you taste a homemade version, you’ll understand why. These juicy chicken skewers are marinated in a creamy Greek yogurt base packed with garlic, cumin, paprika, and oregano, giving them that signature bold, aromatic flavor.
The best part? You only need 30 minutes and a handful of pantry staples. Whether you throw them on the barbecue or cook them in a pan, the result is tender, golden-brown chicken with a slightly smoky, spiced crust. Serve them with a generous dollop of tzatziki, warm pita bread, or a fresh Greek salad for a complete Greek-inspired meal.

Instructions

Prepare all the ingredients. Cut the chicken into even cubes and finely chop the parsley.

Place the Greek yogurt, salt, garlic powder, onion powder, cumin powder, paprika, black pepper, oregano, olive oil, and parsley in a deep bowl. Mix well.

Add the chicken to the marinade and mix until fully coated. Let it marinate for at least 15 minutes for extra flavor.
Meanwhile, soak the wooden skewers. Fill a glass or bowl with water, place the skewers in it, and let them soak for 15–20 minutes. This prevents them from burning during cooking.

Thread the marinated chicken pieces onto the skewers.

Heat the olive oil in a frying pan over medium heat. Cook the chicken souvlaki until golden brown and cooked through, about 8–10 minutes. Turn the skewers regularly so all sides cook evenly.

How do you make chicken souvlaki tender?
Chicken souvlaki becomes extra tender by marinating the chicken with Greek yogurt, olive oil, and spices. Let it marinate for at least 15 minutes. However, marinating it for a longer time (overnight), gives it more flavor and a softer texture.

Most people use chicken breast. I love chicken thighs since they’re juicier and contain more flavor.
Which sauce goes best with chicken souvlaki?
Tzatziki is the most popular sauce for chicken souvlaki, but garlic sauce, yogurt sauce, or a spicy sauce also pair well.
