These buffalo chicken rolls are like a buffalo chicken calzone, only better: soft homemade buns with a spicy, cheesy chicken filling. They’re easy to make ahead and even easier to grab, which makes them one of the best game day appetizers around. Bake a batch for your next game day and watch them disappear!
Why These Buffalo Chicken Pockets Beat a Calzone
A buffalo chicken calzone is great, but it’s big, messy and hard to share. These rolls fix that. Each one is its own little buffalo chicken pocket: a soft, fluffy bun wrapped around spicy chicken and cheese. Think of them as buffalo chicken bombs. Every bite has filling, nothing falls apart, and they’re easy to grab straight off the tray.
Ingredients for This Buffalo Chicken Rolls Recipe
For the dough: A simple, soft dough made with lukewarm milk, honey, instant yeast, butter, all-purpose flour and salt. The milk and butter keep the rolls fluffy and tender.
For the buffalo chicken filling: Boneless, skinless chicken thighs stay juicier than breasts. They’re seasoned with garlic powder, onion powder, paprika, cayenne and black pepper for that classic buffalo kick.
For the sauce: Sweet chili sauce, hot chili sauce and honey balance heat with a little sweetness. Tablespoons of creme fraiche makes the filling creamy. Less heat? Replace the hot chili sauce with more sweet chili.
Extras: Cheese slices for a gooey center, and a beaten egg for a shiny, golden finish.
How to Make Buffalo Chicken Stuffed Bread Rolls
Make the dough. Stir the milk, honey and yeast together, then knead in the butter, flour and salt until you have a smooth dough. Let it rise until doubled, about 1 hour.
Cook the filling. Brown the seasoned chicken in butter. Stir in the sauce and mayo and simmer for a few minutes. Let it cool completely.
Shape the rolls. Divide the dough into 9 pieces and roll each into a square. Add a slice of cheese and some chicken, then fold the dough around the filling and pinch it shut.
Rise and bake. Place the rolls seam side down on a lined baking sheet. Brush with egg and let rise for 30 minutes. Don’t underestimate the second rise since it’s essential to ensure soft rolls. Bake at 400°F until golden brown.

Tips
Cool the filling first. Warm filling makes the dough soft and hard to seal.
Seal the seams well. Pinch the dough tightly so the sauce and cheese stay inside while baking.
Don’t overfill. A little less filling gives you neater rolls that won’t burst.
Weigh the dough. Pieces of about 95 g (3.4 oz) bake evenly.
Adjust the heat. Use less cayenne or hot sauce for a milder, kid-friendly version.
Serve warm. They’re best fresh from the oven.
Instructions

In a large bowl, combine the lukewarm milk, honey and yeast. Stir well and let stand for 5 minutes.

Add the butter, flour and salt. Knead for 10–12 minutes until the dough comes together.

Cover the dough and let it rise in a warm spot for 1 hour, or until doubled in size.

Melt the butter in a skillet over medium-high heat. Add the chicken, salt, garlic powder, onion powder, paprika, cayenne and black pepper. Cook for 5–6 minutes.

In a small bowl, mix the sweet chili sauce, hot chili sauce and honey until smooth.

Add the sauce and creme fraiche to the skillet. Simmer for 2–3 minutes to let the flavors come together.

Transfer the chicken mixture out of the pan and let it cool completely before filling the buns.

Deflate the risen dough and divide it into 9 equal pieces of about 95 g (3.4 oz) each. Shape each piece into a ball.

Roll out one ball of dough into an oval shape, almost square like.

Place a slice of cheese in the center and top with some of the cooled chicken mixture. Add extra sauce and cheese if you like.

Fold the dough inwards from all 4 sides, and seal thightly.

Place the buns seam-side down on a parchment-lined baking sheet. Brush with the beaten egg and let rise for 30 minutes.

Bake the buffalo chicken buns in a preheated oven at 200°C (400°F, conventional bake, not convection) for 12–18 minutes, until golden brown and cooked through. Best served warm.

Veelgestelde vragen
Can I make buffalo chicken rolls ahead of time?
Yes. Cook the filling up to 2 days ahead and keep it in the fridge. You can also bake the rolls completely and reheat them before serving, which makes them an easy game day appetizer.
Can I use store-bought dough or crescent rolls?
You can. Store-bought pizza dough works best. Crescent rolls make a flakier, smaller buffalo chicken pocket. Homemade dough gives you the softest, fluffiest result.
