Tips

Covering the baking dish with parchment paper and aluminum foil prevents the chicken and potatoes from browning too quickly before they are cooked through. This helps keep them nice and juicy.

Add olive oil, water, ras el hanout, garlic powder, dried parsley, and fresh parsley to a bowl. Mix well.

Wash the chicken drumsticks. Remove the skin or leave them as they are. Take a drumstick and cut it vertically in half. Slice the meat along the bone, but not too deep.

Place the chicken drumsticks in a deep bowl. Add the spice mixture and mix thoroughly.

Peel and cut the potatoes into chunks. Peel and slice the yellow onion into strips.

Spread the potatoes and yellow onion over a baking dish. Place the marinated chicken drumsticks on top. Cover the baking dish with a sheet of parchment paper and then aluminum foil. Place the chicken with potatoes in a preheated oven at 220°C (430°F). Bake for 55-60 minutes.

Carefully remove the baking dish from the oven and take off the aluminum foil and parchment paper. Spread the butter over the chicken.

Return the Moroccan chicken drumsticks with potatoes to the oven. Bake until the chicken turns golden brown.
