2 g cayenne pepper powder ⅔ tsp
2 g garlic powder ⅔ tsp
1 g black pepper powder ⅓ tsp
35 ml olive oil
POTATO MIXTURE
700 g potatoes
300 g sweet potato 1 sweet potato
40 g butter unsalted
3 g salt ½ tsp
1 g black pepper powder ⅓ tsp
100 ml coconut milk
SAUCE
125 g yellow onion 1 yellow onion
75 g carrot 1 carrot
3 g curry powder 1 tsp
2 g cayenne pepper powder ⅔ tsp
1 g dried parsley
2 g garlic powder ⅔ tsp
3 g salt ½ tsp
100 ml water
300 ml coconut milk
25 g sweet soy sauce
10 g soy sauce
Tips

To prevent the salmon from drying out, cook it over medium heat and remove it from the heat as soon as it’s just done. The salmon will continue to cook in the sauce later, so you don’t want to overcook it.

For extra flavor, you can marinate the salmon for 15-30 minutes before cooking. You can also do this a day in advance. Store covered in the fridge.

If you like a spicier taste, you can increase the amount of cayenne pepper in the sauce or add fresh red chilies. On the other hand, if you prefer a milder flavor, you can reduce or omit the cayenne pepper.

Add salt and pepper to taste.

Place the salmon, cayenne pepper, garlic powder, black pepper powder, and olive oil in a deep bowl and mix well.

Heat a frying pan over medium heat and cook the salmon until done.

Remove the salmon from the pan and set aside.

In the same pan, sauté the onion and carrot for 4-5 minutes over medium heat. Add the curry powder, cayenne pepper powder, parsley, garlic powder, and salt. Mix well. Add the water and coconut milk, increase the heat, and bring to a boil. Then lower the heat, cover, and let it simmer for 20 minutes.

Add the sweet soy sauce (ketjap manis) and soy sauce, and mix well. Return the salmon to the pan and cook for another 2-3 minutes.

Meanwhile, boil the potatoes and sweet potato in water for 15-20 minutes until soft. Drain. Add the butter, salt, pepper, and coconut milk to the potatoes and mash until creamy.

Spoon the mashed potato mixture onto a plate and top with the salmon in coconut milk. Bismillah, enjoy your meal!
