Ingrediënten

Porties:
50 ml olive oil
150 g yellow onion 1 yellow onion
80 g tomato 1 tomato
400 g chicken thighs
6 g ras el hanout 2 tsps
3 g turmeric powder 1 tsp
3 g garlic powder 1 tsp
2 g cayenne powder ⅔ tsp
1 g black pepper powder ⅓ tsp
20 g fresh parsley
250 g potatoes waxy
100 g carrot 1 carrot
200 ml water
35 g tomato paste
65 g green peas
Tips

Marinate the chicken thighs beforehand and store them covered in the refrigerator.

Add the green peas only at the end and cook them briefly to preserve their fresh color and crunch.

This dish pairs wonderfully with warm, crusty bread (such as Moroccan bread) to dip into the sauce. You can also serve it with a simple salad for a refreshing touch.

Vegetarian option: Replace the chicken with chickpeas or tofu, and consider adding extra vegetables like zucchini or bell peppers.

Stappenplan

1

Heat the olive oil in a skillet over medium heat. Add the finely chopped yellow onion and sauté for 3–4 minutes. Add the diced tomato and stir-fry until combined.

2

Add the chicken thigh pieces, ras el hanout, turmeric powder, garlic powder, cayenne pepper, black pepper, chopped parsley, diced potatoes, and diced carrot. Sauté for 1–2 minutes. Stir in the tomato paste and water. Increase the heat to high. Once the water starts to simmer, lower the heat. Cook for 15–20 minutes.

3

Finally, add the green peas and let the dish simmer gently for another 10 minutes, until the vegetables are tender and the sauce has thickened slightly.
