
Chicken Club Sandwich

A club sandwich is more than just a sandwich: three layers of toasted bread filled with a creamy chicken mixture, fresh vegetables, cheese, and chicken salami. This recipe uses tender pulled chicken in a homemade sauce of mayonnaise, mustard, pickle, and red onion for extra flavor in every bite.
Ready in about 30 minutes and perfect for lunch, a party snack, or a light meal.

Instructions

Prepare all ingredients.

Heat the olive oil in a frying pan over medium heat. Add the chicken and season with salt, onion powder, paprika, cayenne pepper, and black pepper. Cook for 8–10 minutes, turning halfway through, until fully cooked.

Remove the chicken from the pan and let it cool slightly. Then shred it using two forks.

Place the shredded chicken in a large bowl. Add the chopped red onion, pickles, mayonnaise, and mustard. Mix well until creamy.

Grill or toast the slices of bread.

Take one slice of bread and spread with sauce of your choice. Add lettuce and spoon over the chicken mixture. Place a second slice of bread on top and spread again with sauce. Add lettuce, cheese, cucumber, tomato, sauce, and chicken salami. Finish with a third slice of bread.

Repeat for the remaining sandwiches. Cut each club sandwich diagonally and serve immediately.
