salt
water
SAUCE
20 ml olive oil
20 g butter unsalted
125 g yellow onion 1 yellow onion
75 ml pasta water
3 g onion powder 1 tsp
3 g garlic powder 1 tsp
2 g cayenne powder ⅔ tsp
3 g curry powder 1 tsp
1 g dried parsley
300 ml heavy vcream
125 g fresh spinach
100 g cherry tomatoes
1 chicken stock cube

Tips

Add the spinach in batches if the pan is not big enough.

Use any pasta you like.

You can replace the heavy cream with cooking cream.

Add shrimp, chicken breast, chicken thighs, ground meat, or salmon.

Substitute the chicken stock cube with vegetable stock cube.

Add any vegetables you enjoy.

If the sauce hasn’t thickened enough, let it simmer over high heat without a lid for a bit longer. Stir occasionally so the liquid evaporates and the sauce thickens. This may take an extra 3-5 minutes, depending on the amount of liquid in the sauce.

Bring water to a boil in a pot. Add salt, then the penne once the water is boiling. Stir after a few minutes to prevent sticking. Cook the penne for about 8-11 minutes. Drain, but reserve 75 ml of the pasta water.

Heat the olive oil and butter in a pan over medium heat. Add the chopped yellow onion and cook for 3-4 minutes, or until soft. Pour in the reserved pasta water and add the onion powder, garlic powder, cayenne powder, curry powder, and dried parsley. Stir well and let it simmer for 1 minute. Pour in the heavy cream and cook for 5-7 minutes, or until the sauce thickens slightly.

Add the cherry tomatoes and fresh spinach, stirring until the spinach wilts. Crumble the chicken stock cube over the pan and mix together. Add the cooked penne to the sauce and cook for another 2-3 minutes, allowing the flavors to meld (let it sit for a moment).
