850 g meat lamb
7 g salt 1⅙ tsp
4 g turmeric powder 1⅓ tsp
6 g ras el hanout 2 tsps
2 g cinnamon powder ⅔ tsp
2 g cayenne powder ⅔ tsp
2 g coriander powder ⅔ tsp
5 g fresh parsley
15 ml olive oil
200 ml water
175 g red onion 2 red onions, chopped
2 bay leaves
15 g honey
10 g brown sugar

Tips

Brown the meat over medium heat until golden. This caramelizes the exterior and enhances the flavor.

Arrange the meat in the center of a large platter, pour the sauce over it, and decorate with dates, walnuts, and almonds around the edges and on top.

Marinate the lamb with the spice mix and olive oil for several hours (or overnight) to allow the flavors to penetrate deeply, making the meat more tender.

Like it spicy? Add a finely chopped red chili pepper with the red onion.

Stir occasionally during simmering to prevent the dish from sticking to the bottom of the pan.

Serve with a simple salad of cucumber, tomato, and red onion dressed with lemon juice and olive oil.

Peel and cut the apple into pieces. Peel and chop the yellow onion. Place the apple, yellow onion, and fresh parsley in a food processor and blend until fine.

In a large bowl, combine the lamb, salt, turmeric powder, ras el hanout, cinnamon powder, cayenne powder, coriander powder, chopped parsley, and olive oil. Mix well.

Heat the butter and olive oil in a deep pan over medium heat. Add the meat and brown it on all sides.

Add the chopped red onion and the apple mixture to the pan. Sauté for 4-5 minutes to release the flavors. Add the bay leaves and water. Turn the heat to high until the mixture starts to simmer, then lower the heat. Cover the pan and let it simmer gently for 60 minutes.

Add the honey and brown sugar, stirring well. Let the sauce simmer uncovered on low heat for 30 minutes to thicken. For a thicker sauce, simmer on high heat while stirring constantly to prevent burning.

Remove the bay leaves. Arrange the meat on a serving platter and pour the thickened sauce over it. Garnish with dates stuffed with walnuts and roasted almonds. Serve with fresh Moroccan bread.
