26 g butter unsalted
25 ml olive oil
500 g chicken thighs
3 g cayenne powder 1 tsp
5 g curry powder 1⅔ tsp
2 g garlic powder ⅔ tsp
3 g onion powder 1 tsp
50 ml water
1 chicken stock cube
20 g sweet soy sauce
10 ml soy sauce
400 ml coconut milk
1 g dried parsley

Tips

Use starchy potatoes for a fluffy and soft mash.

Marinate the chicken thighs a day in advance to enhance the flavor. Store covered in the refrigerator.

Chicken thighs are juicier and more tender than chicken breast. If using chicken breast, reduce the cooking time slightly.

Use melting cheese like mozzarella, cheddar, or young Gouda. For a crunchy topping, sprinkle breadcrumbs over the cheese before baking.

For an extra crispy top, place the dish under the grill (at 220°C) for the last minute.

You can prepare the mashed potatoes and chicken mixture ahead of time and store them in the fridge. Assemble the dish just before baking.

Add extra vegetables like finely chopped bell peppers, leeks, or mushrooms. Cook them with the chicken.

Peel and cut the potatoes into equal pieces. Boil them in plenty of water with a pinch of salt for 15-20 minutes, or until soft. Drain well.

Place the potatoes in a large bowl. Add milk, butter, salt, and black pepper powder. Mash or blend until smooth.

Heat the butter and olive oil in a frying pan over medium heat. Cut the chicken thighs into small pieces and add them to the pan along with cayenne powder, curry powder, garlic powder, and onion powder. Stir well and cook for 4-5 minutes, until golden brown.

Add water, the chicken stock cube, sweet soy sauce (ketjap manis), soy sauce, and coconut milk to the pan. Stir thoroughly and let simmer for 5-7 minutes, or until the sauce thickens.

Stir in the dried parsley. Mix well.

Spread the mashed potatoes evenly into a baking dish. Layer the chicken mixture on top. Sprinkle grated cheese over the dish as a topping. Place the dish in a preheated oven at 200°C (400°F top and bottom heat). Bake for 10-15 minutes, or until the cheese is golden brown and melted.
