500 g flour all-purpose flour
7 g salt 1⅙ tsp
12 g honey
275 ml water lukewarm
6 g baking powder
5 ml sunflower oil
CHICKEN MIXTURE
220 g yellow onion 1½ yellow onion
550 g chicken thighs
5 g ras el hanout 1⅔ tsp
2 g turmeric powder ⅔ tsp
3 g cayenne powder 1 tsp
3 g garlic powder 1 tsp
4 g salt ⅔ tsp
1 g dried parsley 1 tsp
10 ml olive oil for baking

Tips

Knead the dough for at least 10-12 minutes to make it smooth and elastic. This helps stretch it into a thin layer without tearing.

Lightly grease your hands, work surface, and dough while shaping the msmen to prevent sticking and make stretching easier.

Try to stretch the dough as thinly as possible without tearing it. A thicker layer will make the msmen less crispy.

Allow the chicken mixture to cool completely before filling the msmen.

Ensure the frying pan is preheated over medium heat before cooking the msmen.

Cook the msmen slowly and only flip when the bottom is golden brown.

You can freeze the cooked msmen and reheat them later in a dry frying pan or in the oven at 180°C for a few minutes.

Place the flour, baking powder, and salt in a bowl. Make a well in the center and add the honey and water. Mix for 10-12 minutes until smooth.

Add the sunflower oil and knead for another minute. Cover the dough and let it rest for 30 minutes.

Heat olive oil in a frying pan over medium heat. Add the chopped yellow onion and sauté for 3-4 minutes. Add the finely chopped chicken thighs, ras el hanout, turmeric powder, cayenne powder, garlic powder, and salt. Cook for 6-7 minutes until the chicken is fully cooked.

Stir in the dried parsley and mix well. Let the chicken mixture cool completely.

Divide the dough into 9 equal pieces of about 85 g each. Shape them into balls.

Grease your hands with oil and flatten a dough ball on an oiled work surface (25 ml oil). Cover and let rest for 30 minutes.

Grease your work surface again (15 ml oil per msmen) and place the dough on it. Using your fingertips, gently stretch it from the center outward into a very thin sheet, approximately 38 x 33 cm. Regularly oil your hands to prevent tearing.

Use a pizza cutter to make 4 small cuts around the edges to make folding easier, dividing the dough into three sections.

Place a slice of cheese on the dough and top with a portion of the chicken mixture. Fold the dough from left to right.

Place the filled msmen on a sheet of parchment paper. Cook in a frying pan over medium heat until golden brown and fully cooked on both sides.
