water
SHRIMP MIXTURE
20 g butter unsalted
20 ml olive oil
250 g shrimps peeled
2 g cayenne powder ⅔ tsp
2 g onion powder ⅔ tsp
2 g garlic powder ⅔ tsp
0.5 g dried parsley
SAUCE
40 g butter unsalted
400 ml heavy cream
3 g onion powder 1 tsp
3 g garlic powder 1 tsp
1 g black pepper powder ⅓ tsp
1 g thyme
4 g salt ⅔ tsp
75 ml pasta water see step 1 & 3
Tips

If you have extra time, marinate the shrimp for 15-20 minutes in a bit of olive oil, lemon juice, and the spices for even juicier and more flavorful results.

Avoid overcooking the pasta; it should be “al dente” so it remains firm enough to absorb the sauce.

Don’t overcook the shrimp. Once they turn pink and start to curl, they’re perfectly done.

Want a cheesier sauce? Add some grated Parmesan cheese.

Prepare all ingredients and spices beforehand to make cooking easier.

Adjust the salt to taste.

Not a fan of spice? Replace the cayenne pepper with red bell pepper powder.

Bring a large pot of water to a boil and add a pinch of salt. Cook the mafaldine for 11-14 minutes, or according to the package instructions. Carefully scoop out 75 ml of the pasta water and set it aside. Drain the pasta and let it cool slightly.

Heat the butter with the olive oil in a skillet over medium heat. Add the shrimp along with the cayenne pepper, onion powder, garlic powder, and dried parsley. Sauté the shrimp for 2-3 minutes, or until just cooked through. Remove them from the pan and set aside.

Using the same skillet, prepare the sauce. Heat the butter again and add the heavy cream, onion powder, garlic powder, black pepper, thyme, salt, and reserved pasta water. Let the mixture cook for 5-7 minutes, until the sauce thickens.

Add the cooked mafaldine to the sauce in the skillet. Mix everything well to ensure the pasta is fully coated in the sauce.

Plate the pasta and top with the sautéed shrimp. Garnish with additional fresh parsley or herbs if desired.
