225 ml milk lukewarm
15 g honey
7 g instant yeast 1 tbsp
400 g flour all-purpose flour
8 g salt 1⅓ tsp
50 g butter unsalted
CHICKEN MIXTURE
25 ml olive oil
600 g chicken thighs
4 g salt ⅔ tsp
5 g ras el hanout 1⅔ tsp
3 g cayenne powder 1 tsp
2 g garlic powder ⅔ tsp
1.5 g black pepper ½ tsp
5 g fresh parsley finely chopped
EXTRA

Tips

Use warm, not hot milk. If the milk is too hot, it can kill the yeast and the dough won’t rise as well. Ideally, it should be around 37°C (body temperature).

If your kitchen is cold, place the dough in a turned-off oven with a small bowl of hot water. This creates a warm, humid environment for perfect rising.

Marinate the chicken a few hours in advance for a deeper flavor.

Add salt to taste.

Add the lukewarm milk, honey, and yeast to a bowl. Mix well and let it rest for 5 minutes.

Add the flour, salt, and softened butter. Knead the dough for 10-12 minutes until smooth.

Cover and let it rise for 1 hour or until doubled in size.

Wash and cut the chicken thighs into small pieces. Heat the olive oil in a pan over medium heat. Add the chicken, salt, ras el hanout, cayenne powder, garlic powder, black pepper, and chopped parsley. Cook for 6-7 minutes until the chicken is fully cooked. Let it cool.

Deflate the dough and divide it into 7 equal pieces, each weighing about 95 grams.

Take a ball of dough and roll into a flat circle.

Place a slice of cheese on top and spread a portion of the chicken mixture over it. Fold the dough in half.

Place the dough on a baking tray lined with parchment paper. Brush with a beaten egg and sprinkle with sesame seeds. Let it rise for 30 minutes or until doubled in size.

Bake the bread in a preheated oven at 220°C (428°F) for 12-18 minutes until golden brown.
