650 g chicken thighs
4.5 g salt ⅔ tsp
3 g coriander powder 1 tsp
6 g ras el hanout 2 tsp
2 g cayenne pepper powder ⅔ tsp
4 g onion powder 1⅓ tsp
3 g garlic powder 1 tsp
1 g dried parsley
25 ml olive oil
Tips

Let the chicken marinate in the spices for at least 30 minutes, but ideally for a few hours. Cover and store in the fridge while marinating.

Substitute dried parsley with fresh parsley.

If using wooden skewers, soak them in water for at least 20 minutes to prevent them from burning during cooking.

Cut the chicken into evenly sized cubes.

Ensure the frying pan is hot before adding the chicken. This will give the chicken a nice sear and keep it juicy inside.

Add a squeeze of lemon or lime juice if you like.

Wash and cut the chicken thighs into small cubes. Place in a large bowl and add salt, coriander powder, ras el hanout, cayenne pepper powder, onion powder, garlic powder, dried parsley, and olive oil. Mix thoroughly.
